Have you planned a menu that will spoil the special dad in your life this Sunday? Have you had any time to yourself to even BEGIN thinking about things like this? Well, you have few days yet to get the grocery shopping done and that’s why I want to pass along a few more delicious dishes that my listeners have given to me – well, the side dishes anyway. Of course, everyone knows the sides make the meal…
Two packages of tri-color spiral noodles, cooked. Add in Italian
dressing, salami chunks, and black olives, whole or sliced. Top off with some parmesan cheese. Mix it up and put it in fridge to cool. Serve cold. My family loves it. Danyelle~
Pea salad made with peas, cooked macaroni, chopped onions, cubed cheese, cherry tomatoes and ranch dressing. This is a hit at our barbecue. Elisha~
Cooked quinoa with avocado, tomatoes, black beans, cilantro and red onions added in. You can add dressing or not. Serve cold. Noelle~
Fresh tomatoes sliced and topped with a dab of Miracle Whip (optional) and topped with fresh basil. If you are really hungry, place the same ingredients on a fresh roll or pita bread. You can add Swiss or Boursin in place of the Whip. You can drizzle with balsamic vinaigrette too. Traci~
And just to toss in my two cents: If your barbecue calls for baked
beans, you can spice those up by adding fire-roasted diced tomatoes, or bacon and brown sugar, or sliced pre-cooked kielbasa, or onion and green pepper, or pancetta and topped with crumbled feta cheese…the add-ins are many! And try sprinkling some lemon pepper on your corn cob. I promise you will love it!
